Our client, an all-villa resort set amidst the tropical gardens and white powdery beaches of the Southeast Coast of Zanzibar Island is seeking to hire an experienced Restaurant Manager . The successful candidate will be responsible for. The ideal candidate must have a relevant Bachelor’s degree or diploma preferably from Utalii College, a Must have a minimum of 5 years of experience in managing a high-end restaurant in a Beach Boutique resort and must be willing to relocate to Zanzibar.

Key Responsibilities

• Organize, supervise, and evaluate food and beverage service operations, ensuring smooth functioning from morning opening to late-night closing.
• Maintain high standards of cleanliness and ambience in the restaurant and bar/lounge areas, adhering to HACCP points.
• Study and adhere to Standard Operating Procedures (SOPs), proposing changes for consistent adherence.
• Follow directions and instructions from superiors, including the Director, without question, ensuring strict adherence to laid-down procedures.
• Ensure team grooming and personal grooming standards are always maintained.
• Stand by safety procedures and emergency management protocols, including medical response and rescue.
• Understand and work in alignment with the company’s mission, vision, and objectives, as guided by GM and HQ administrators.
• Maintain property care, including regular maintenance (R&M) and creating the best ambiance.
• Care for operating equipment to ensure a long shelf life and optimal performance.
• Submit daily checklists provided by GM/directors and update them accordingly.
• Monitor and ensure timely achievement of Return on Investment (ROI) targets set for the outlet.
• Enforce order and discipline within the department, taking necessary disciplinary actions as per procedures.
• Ensure staff uniforms, Personal Protective Equipment (PPEs), and grooming standards are maintained.
• Enhance dedicated waiter processes for personalized service to guests, limiting the number of personnel attending to each table.
• Work on menu design to maintain attractiveness and high yield.

Qualifications

• Relevant Bachelor’s degree or diploma preferably from Utalii College.
• Must have a minimum of 5 years of experience in managing a high-end restaurant in a Beach Boutique resort.
• Proficient in PMS like Ezee latest cloud-based version and IDS.
• Skilled in compiling and analyzing analytics for forecasting.

Monthly Gross Salary: Ksh 130,000 (Approx. USD 1000) (KES)
